Cherry to this day is the Popsicle company's best-seller, and it's not unclear why. It's classic, it's delicious, and it reminds one of childhood. We think these sweet savoury pops are those ones all grown up. The spices give them an amazing flavour with tons of dimension, personality, and nuance. We raised them well ; )

Method 1 - Place all ingredients into a small saucepan. Bring to a boil then simmer until cherries are soft - about 10 minutes on low heat and when spices have infused completely. Remove from heat and allow to cool completely. Remove sprigs of thyme and star anise.
Step 2 - Place cherry mixture in a blender and blend until smooth. However if you like chunks of cherry pulse to desired consistency.
Step 3 - Pour into popsicle molds, freeze for 6 hours, and enjoy.
