Slow Cooker Beef Carnitas


Set It... Forget It... Carnitas!

Started the night before, turned on before you head off to work and arriving home to a flavourful and tender pile of citrus and spice slow cooked beef - dinner's ready when you walk in the door! What's not to like about that?! Used in a rice bowl, filling of taquitos or enchiladas or tacos - this beef will sort you out for several meals!

Step 1 - Toast cumin seeds in a nonstick pan over medium heat for 4-5 minutes, or until cumin becomes fragrant. Remove from heat and crush with a mortar and pestle.

Step 2 - Mix together toasted cumin and remaining spices and set aside. In a slow cooker base or large bowl, drizzle on Chipotle Olive Oil on beef and then coat roast with spice mixture, rubbing into meat. Add roast peppers, onions, garlic, lime and oranges to slow cooker base then refrigerate overnight for at least 6 hours.

Step 3 - Move base to slow cooker and begin cooking over low heat in slow cooker. Cook roast for 6 hours, then remove bee carefully from slow cooker and set in a large serving dish. Let sit for a few minutes, then shred with forks. Discard citrus and serve beef, onions and peppers with tortillas for tacos or on top of cumin scented rice alongside all your favorite fixings for a yummy Mexican inspired bowl!
