Step 1 - Soak dates in ¼ cup warm water for 5 minutes to help with blending and shaping power balls. Drain and add to a food processor with all ingredients and blend until well combined, ensuring to scrape down sides as needed.
Step 2 - Form balls in approximately 1½-2” sized balls, rolling in extra coconut or chia seeds if desired. Store in airtight container in refrigerator for up to 1 week.
