Step 1 - Combine all dry ingredients in a large bowl, then add in hot water and Persian Lime Olive Oil and mix to combine - dough will be shaggy and loose. Knead in bowl for 10 minutes until dough begins to come together. Cover bowl with a clean kitchen towel and let dough sit for 10 minutes to relax gluten in flour.
Step 2 - Divide dough into 8 equal sized balls, and roll out in a circular shape very thinly on a lightly floured surface.
Step 3 - In a non-stick pan over medium heat, cook each tortilla for 4-5 minutes, until begins to bubble up and brown lightly. Flip over and repeat - then move tortilla to a clean tea towel and cover to keep warm until ready for the next tortilla. Tortillas will freeze well, separated by wax paper, wrapped in plastic wrap, for up 1 month.
