Crispy Za’taar Edamame and Chickpeas

A Crisp and Spicy Snack!

A middle eastern spice mixture, za'atar is usually a mixture of oregano, thyme, savoury, sesame seeds, sumac and salt, with regional variations. Often found sprinkled on top of bread, pitas and hummus, it’s a flavourful addition to roasted veg and dips. Go to town with this one - or more like, Go Middle Eastern! Chickpeas and Edamame can also be roasted with truffle salt, classic salt and pepper, or even a spicy chili powder or harissa spice mix!

  • 1 package frozen edamame, thawed
  • 1- 14 oz can of chickpeas
  • 3 tsp Garlic Olive Oil
  • ½ tsp Toasted Sesame Oil
  • 1½ tsp Za'atar
  • 1 tsp Fleur de Sel

Step 1 - Preheat oven to 400*F and lay out a sheet of parchment paper on a cookie sheet.

Step 2 - Over a colander, drain any liquid from edamame and chickpeas. Rinse and spread out chickpeas and edamame on a clean kitchen towel.
Step 3 - In a medium bowl, toss together edamame, chickpeas, EVOO, za'atar and fleur de sel. Spread out evenly on cookie sheet and roast for 30 minutes, turning every 10 minutes to avoid burning. Serve and eat within a few hours to optimize crunchiness.
