Coffee for dessert can't ever be a bad thing - a beautiful way to infuse one last shot of caffeine into your day - use decaf if you must!
Step 1 - In a shallow 9x9" dish, stir together coffee and maple syrup until well combined.
Step 2 - Freeze dish and after 50-60 minutes, scrape coffee with a fork, creating ice crystals that will reform each time you scrape them. Continue every 30-40 minutes, scraping with a fork for 2-3 hours or until completely frozen. Serve in chilled small glasses.
