This mayo is everything we love about mayo and everything we love about smokey chipotle together … great for yam fries, as a sandwich spread and mixed into salad dressings for a extra zip.

Step 1 - In a food processor, slowly mix egg, mustard and vinegar together.
Step 2 - Place blender on the slowest speed. In a fine stream while blender is running, slowly pour in chipotle oil. Don't pour to quickly but ensure that all the oil is evenly incorporated.
Step 3 - Continue blending, until mayo is thick and creamy
Step 4 - Use immediately, keep in fridge in an airtight container for 2-3 days.
