Plantains are much more mild in taste than bananas, so they make a fabulous chip! These are a perfect healthy alternative to potato chips, and are much more unique! They are excellent as a movie-watching snack, or packed up for hikes or school lunches. Spoil yourself with something a little different!

Step 1 - Preheat oven to 400*F and line a baking sheet with parchment paper.
Step 2 - Slice into the plantain with a sharp paring knife just deep enough to cut through to the fruit lengthwise. Repeat 4 more times around the fruit. Begin to peel off the peel, and then using a mandoline or sharp knife, thinly slice the plantain lengthwise for long strips. For a crisp, potato-like chip slice wafer-thin (1/16th on the mandoline or just slightly thicker than a sheet of paper), or thicker for a slightly chewier chip.
Step 3 - In a bowl, add plantain strips and drizzle over the olive oil and spices. Gently toss, then lay out onto a parchment paper-lined sheet. Bake for 8-10 minutes per side until lightly brown. If baking thicker chips, add 10-12 more minutes per side.
