Bacon Balsamic Jam


Just in case bacon wasn't good enough already . . .

This is hard not to just eat on its own. We know that it's supposed to be a condiment, but it's just so delicious. Do save it for your burgers though, because it really makes them out of this world, better than restaurant, make your friends jealous good. Consider this your new secret ingredient ; )

Step 1 - Heat a medium-sized saucepan over medium heat. Chop bacon into thin slices and add to hot pan. Cook until bacon is crisp, then remove from pan with a slotted spoon and drain fat on a paper towel-lined plate. Drain all but 2 tbsp of bacon fat that rendered out of the pan.

Step 2 - Add onions and garlic to the pan and cook in bacon fat over medium heat for 5-6 minutes, stirring to prevent sticking and to even browning. Add in brown sugar and stir to coat. Cook another 3-4 minutes. Stir in bourbon and balsamic and scrape the bottom of the pot, getting all the yummy bits into your jam and reducing the bourbon into the jam. Add in remaining ingredients including the chopped bacon. Reduce heat to low-medium and stir occasionally. Cook jam for 8-10 minutes, until onions are dark and caramelized and jam has thickened.
