Super Duper Avocado Toast!

  • 1 ripe avocado,
  • 2 slices sprouted grain bread, toasted
  • 1/2 cup Greek Yogurt
  • EVOO or Lime Olive Oil, for drizzling
  • 1/2 tsp chia seeds
  • pinch red pepper flakes and Himalayan Pink Salt

Step 1 - Preheat broiler. Drizzle bread with olive oil and toast bread for 3-4 minutes until toasted. Spread with Greek yogurt and sprinkle with chia seeds.

Step 2 - Slice avocado in half and remove pit. Gently begin peeling skin off avocado halves and set on a cutting board cut side down.

Step 3 - With a sharp knife, thinly slice avocado about 1/8th" thick. Fan out avocado slices in a long line overlapping line and begin curving the edges towards the center, forming a circle. Gently lift the rose with a thin spatula and set on top of the toast. Repeat with the other half of the avocado and place on the other slice of toast. Sprinkle with a pinch of the red pepper flakes and Pink Salt. Drizzle toast with olive oil and serve!
